CHICKEN CURRY (INDIAN OR MALAY)

1 whole chicken (3 lbs.)

2 med. yellow onions, chopped

4 cloves garlic, minced

2'; piece of ginger, minced

2 tomatoes, chopped

1 tsp. yellow mustard seeds

1 tsp. cumin seeds

1 tsp. turmeric

3'; stick cinnamon

2 c. chicken stock

2 tbsp. curry powder

1 tsp. gharum masala

1 c. coconut milk (opt.)

Cut the chicken into pieces and brown in oil. Remove and add chopped onion. Saute until tender. Add garlic and ginger, make sure there is enough oil so that nothing sticks. Add cumin and mustard seed. Fry until the mustard seeds begin to ';pop';. Add the turmeric and curry powder and stir constantly to prevent any sticking. Stir the ';paste'; until the curry powder becomes fragrant; this usually takes 1 to 2 minutes (be careful not to burn the curry powder). Add the chopped tomatoes and stir until they form a sauce (3-4 minutes). Add the chicken broth, cinnamon stick and chicken. Cover and simmer until chicken is cooked (approximately 45 minutes). Stir in the gharaum masala and serve with white rice.

If you want a smoother, Malay style curry, add the coconut milk with the chicken broth.

For a more authentic curry, either make your own curry powders and marsala or use some Sheerwood, Madras, or some other Indian or British brands.Looking for a good chicken curry recipe, without the raisins, please.?

  • ';Pick Up Stix'; House Special Chicken Recipe?

Does anyone have a recipe for the ';House Special Sauce'; at Pick up Stix. They use it in their recipe for ';House Special Chicken';. I crave it all the time and would love to be able to prepare it from home!

Thanks!';Pick Up Stix'; House Special Chicken Recipe?
Believe it or not the sauce is the standard stir fry sauce used in most Asian restaurants just like Yoshinoya's:

To make the stir-fry sauce, combine the following six ingredients in a bowl:

    Ingredients:

1 teaspoon chili oil (you can substitute sesame oil)

    2 cloves garlic, minced

    1 tablespoon minced ginger

3 spring onions, washed, white parts sliced very thin (reserve green sections)

    3 tablespoons soy sauce

    3/4 cup water

When your stir fry is ready to plate add the combined ingredients into the wok or pan and then add the cornstarch slurry.

1 tablespoon cornstarch mixed with 2 tablespoons water';Pick Up Stix'; House Special Chicken Recipe?
Well I don't have it for sure ... but try researching it on Google or next time you're at Pick up Stix, ask them for the recipe and if they say it's ';secret'; or ';none of your business'; or something along that line, you should tell them that they should sell bottles of their 'secret sauce' in grocery markets and at their local restaurants ... but I don't think you'll ever get the recipe ... 0_0

If you want to do small ones, you can always use dinner rolls, small bowls, cream of chicken and whatever vegetables you want in the pie.

Just line the bowl with dinner roll dough, fill with cream of chicken/diced chicken/veggies and top with another layer of diner roll, then bake (following the directions for the dough on the container).

Just butter them up, and serve! This recipe makes really easy and quick muffin sized pies, great for dinner parties or impressing parents. :)

    Chicken Fricassee (Serves 6)

Recipe was adapted by David Simmons from a chicken fricassee recipe attributed to Mamman, which was included in a recipe box collection sold in the 1960鈥檚 at Asphodel Plantation.

    4 chicken thighs

    4 chicken drumsticks

    2 chicken breast halves

Salt, black pepper to season chicken

陆 to 戮 cup olive oil

    陆 cup all-purpose flour

    3 cups chopped onions

    5 cloves garlic, finely minced

戮 cup chopped celery, also include celery leaves if possible

    4 to 5 cups water

1 tsp. dried thyme leaves, crumbled

    1/8 tsp. red pepper (optional)

    1 tsp. salt

    陆 cup red wine

1陆 bunches green onions, chopped, including tops, reserve 1 tbl. chopped green onion tops for garnish

陆 cup plus 2 Tbsp. chopped fresh parsley, divided

    Cooked brown or white rice

    1. Liberally salt and pepper chicken pieces.

    2. Heat olive oil on medium high in a large Dutch oven-type pot or two heavy skillets if you don't have one large pot. It's important when browning the chicken not to crowd the pieces. You have to have lots of room for the chicken to sear and brown on all sides and not steam cook in this step. Go for a dark golden brown crust on the skin.

    3. Remove the browned chicken from the hot oil and add in the flour and stir to make a medium-brown roux. Next, stir the onions (not the green ones), garlic and celery into the roux and cook until everything is softened and caramelized with a nice covering of roux.

    4. Return chicken to the pot with the roux and vegetables and pour in 4 to 5 cups water. Add seasonings, the thyme, red pepper and salt. Stir everything until gravy is starting to thicken. Reduce heat to low and stir in red wine. (You could probably prep the dish in a Dutch oven or cast-iron skillet and then simmer the gravy in a slow cooker so you don't have to keep watch while it cooks down.)

    5. Simmer, covered, for about 2 陆 hours. Check occasionally to make sure the gravy is developing. Add more liquid if needed, but it shouldn't be necessary.

    6. Stir in almost all of the green onions and 陆 cup of the chopped parsley and simmer covered for an additional 30 minutes.

    7. Check for seasoning. Serve over cooked rice. Garnish each serving with a sprinkle of chopped green onion and chopped parsley.

    CHICKEN PICCATA

2 skinless and boneless chicken breasts, butterflied and then cut in half

Sea salt and freshly ground black pepper

2 cups all purpose flour, for dredging

    6 tablespoons unsalted butter

    5 tablespoons extra-virgin olive oil

    1/3 cup fresh lemon juice

    1/2 cup chicken stock

    1/4 cup brined capers, rinsed

    1/3 cup fresh parsley, chopped

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Chicken with 40 Cloves of Garlic

3 whole heads of garlic, about 40 cloves

2 (3陆 lb.) chickens, cut into eighths

    Kosher salt

    Freshly ground black pepper

    1 Tbsp. unsalted butter

    2 Tbsp. good olive oil

    3 Tbsp. Cognac, divided

1陆 cups dry white wine (I鈥檝e used chix broth before)

1 Tbsp. fresh thyme leaves (1 tsp. dry)

    2 Tbsp. all-purpose flour

    2 Tbsp. heavy cream

Separate the cloves of garlic and drop them into a pot of boiling water for 60 seconds. Drain and peel garlic; set aside.

Dry the chicken w/ paper towels. Season liberally w/ salt %26amp; pepper on both sides. Heat the butter and oil in a large pot or Dutch oven over med-high heat. In batches, saut茅 chicken in the fat, skin side down first, until nicely browned, about 3-5 minutes on each side. Turn over w/ spatula or tongs; do not pierce skin w/ fork. If the fat is burning, turn heat down to medium. When a batch is done, transfer to a plate and continue to saut茅 all the chicken in batches. Remove the last chicken to the plate. Add all the garlic cloves to the pot. Lower heat and saut茅 for 5-10 minutes, turning often until evenly browned. Add 2 Tbsp. of the cognac and the wine to the garlic, return to a boil, scraping the brown bits from the bottom of the pan. Return the chicken to the pot with the juice and sprinkle chicken w/ thyme leaves. Cover and simmer over the lowest heat for about 30 minutes, or until chicken is tender.

Remove the chicken to a platter, cover w/ foil to keep warm. In a small bowl, whisk together 陆 cup of the sauce and the flour, and then whisk this back into the sauce in the pot. Raise the heat, add the remaining Tbsp. of Cognac, and the cream. Boil for 3 minutes. Taste sauce and adjust for salt and pepper to taste; it is important for the sauce to be very flavorful because chicken tends to be bland. Pour the sauce and the garlic cloves over the chicken and serve hot.

    Reheats well.

I'm with chickenrun - except i use boneless chicken breasts and italian dressing marinate for as long as possible (usually put it marinade the nite before) then grill to JUST done - VERY JUICY AND DELICIOUS!!! Also, I think that the seasoning packet is best - not from the already made bottle.
    4 boneless, skinless chicken breasts

1 can cream of mushroom soup

1 can cream of chicken soup

    1 can water

1/2 cup white wine ( I don't use this cause I don't care for it)

Put all ingredients in crock pot and cook for about 2-4 hours on high. Before serving add 1/2 cup sour cream. I usually use more cause I like it. Serve over noodles, rice or mashed potatoes.

I have also added frozen broccoli about 30 min before serving, water chessnuts or other veggies. Still good and my kids like it too.
Whole cut up chicken, marinaded in Zesty Italian Dressing, slow cooked on the grill...comes out nice and juicy and oh so delicious!
    Chicken breast browned

into a casserole with cream of anything soup on top. Finish in oven. serve over rice
Take a whole cut up chicken.....marrinate in a mixture of bbq, liquid smoke, and ranch dressing for about 4 hours. The amounts don't matter it is all about personal taste. Then slow cook over a charcoal grill until done. Very easy and tastes great.
Slow roasted chicken in the oven is the best. Take a whole chicken and rub butter and seasonings on top (I just use garlic, salt and pepper) Anyways wrap in tinfoil and put in oven over low heat 350 and bake for about 4 to 5 hours.

It is so juicy and the skin is light brown. Make a couple of side dishes and it's done. Enjoy.

If you have chicken parts slow roast them and put bbq sauce on it just before it is done. Oh yea Yummy!

    Lemon and Garlic Roast Chicken

Prep Time: 20 minutes Cook Time: 1 hour 35 minutes

    Yield: 3 to 4 servings

    1 (5 to 6-pound) roasting chicken

    Kosher salt

    Freshly ground black pepper

    1 large bunch fresh thyme

    4 lemons

3 heads garlic, cut in 1/2 crosswise

    2 tablespoons butter, melted

    1/2 pound sliced bacon

    1 cup white wine

    1/2 cup chicken stock

Preheat the oven to 425 degrees F.

Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the chicken in a large roasting pan. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the thyme, reserving enough thyme to garnish the chicken dish, 1 lemon, halved, and 2 halves of the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Cut 2 of the lemons in quarters and scatter the quarters and remaining garlic around the chicken. Lay the bacon slices over the chicken to cover.

Roast the chicken for 1 hour. Remove the bacon slices from the top of the chicken and set aside. Continue roasting the chicken for an additional 1/2 hour, or until the juices run clear when you cut between a leg and thigh. Remove to a platter and cover with aluminum foil while you prepare the gravy.

Remove all but 2 tablespoons of the fat from the bottom of the pan. Add the wine and chicken stock and bring it to a boil. Reduce the heat, and simmer for 5 minutes, or until reduced by half.

Slice the chicken on a platter. Garnish the chicken platter with the bacon slices, roasted garlic, reserved thyme and 1 lemon, sliced. Serve with the gravy.

Jerk Chicken (Grilled Spicy Marinated Chicken)

Prep Time: 10 minutes Inactive Prep Time: 24 hours

    Cook Time: 25 minutes

    Yield: 10 servings

    Marinade:

    1 cup finely chopped scallion

2 Scotch bonnet or habanero chiles, seeded and minced (wear rubber gloves) plus, if desired, additional Scotch bonnet chiles for garnish

    1 tablespoon soy sauce

    1 tablespoon fresh lime juice

    2 1/2 teaspoons ground allspice

    1 1/2 teaspoons English-style dry mustard

1 bay leaf, center rib discarded and crumbled

    1 garlic clove, chopped

    1 1/2 teaspoons salt

    1 teaspoon sugar

    3/4 teaspoon dried thyme, crumbled

    1/2 teaspoon ground cinnamon

2 1/2 pounds chicken parts, the wing tips discarded

Vegetable oil, for brushing the grill

To make the marinate: In a food processor or blender puree the scallion, the chiles, the soy sauce, the lime juice, the allspice, the mustard, the bay leave, the garlic, the salt, the sugar, the thyme, and the cinnamon.

Put the chicken parts in a heavy-duty resealable plastic bag and spoon the marinade over them, coating them well. Seal the bag, pressing out the excess air, and let the chicken marinate, chilled, turning the bags over several times, for at least 24 hours and up to 2 days.

On an oiled rack set 4 to 6 inches over glowing coals, grill the chicken, in batches if necessary, and covered if possible, for 10 to 15 minutes on each side, or until it is cooked through. Transfer the chicken as it is cooked with tongs to a heated platter; keep it warm, covered loosely with foil.

    :)
u can do so much with chicken. get some boneless, skinless cutlets, coat in some italian breadcrumbs and pop in the oven for about 45 minutes.

I also like bone in breast, brushed with BBQ sauce and baked or, and I know this sounds gross but it's really good, take bone in chicken breast, coat lightly with mayo, sprinkle with paprika and bake.

Take a caserole dish and cover the bottom with a cup on uncooked stuffing mix, put in some bonless, skinless chicken, heat up a can of cream of mushroom soup with about a 1/4 cup of milk and spoon over chicken, drain a can of green beans and layer over soup. Make a cup of stuffing per the cooking instructions and spread over the top. Cover in foil and bake at 350 for 45-60 minutes.
chicken that mix with oyster sauce, sugar, sault, pepper and garlic .then fried in a deep fried.

    eat it with steam rice.

very nice and very easy to cook.
definitely go to allrecipes.com this is a great recipe site and the directions and serving sizes are very helpful! good luck!1
Use skinless chicken breasts, sprinkle them with salt, pepper, garlic powder, and basil. Use grease or olive oil in a pan and sear the breasts. Put on low to medium heat, add a little water and cook until the chicken is done, about 45 minutes to an hour. Take the chicken out, add a little flour and make a brown gravy. This will make you slap yo mama.
I have a quick and easy one, that involves little ';cooking';. Just get some boneless skinless chicken breast or if you prefer dark meat, then use that. Put it in a casserole dish, top it with a can of cream of chicken soup or cream of mushroom. Add in some carrots and peas. Cover with foil and bake in the oven at 400 degrees. Put your rice on a plate and then cover with the mixture. It is pretty darn good!
Here you go. This is a recipe I used a lot when I was first learning to cook. Get a can of Campbell's cream of chicken soup (or cream of anything... cream of mushroom also works well, or the new chile verde soup), put it in a large pan with just a little bit of water (3-4 tablespoons... or you could use beer or wine). Put the raw chicken in, cover, and simmer on the stovetop for about 45 minutes. The chicken is best when you cook it long enough that it starts to fall apart, very tender. The sauce will thicken as you cook it. It's great served alongside rice.
Get the Chinese black bean sauce. Or you can just cook the chicken in a can of cream of mushroom sauce, very yummy.
I have a secret that I keep in the back of my freezer, so my husband doesn't see it and he compliments me without my having to do a blessed thing:

Pilgrim's Pride Boneless Skinless Chicken Breast, Italian Style Savory Recipe.

You'll find it packaged with the chicken in the supermarket, and it's pre-marinated chicken breasts. All you have to do is put a little butter in a baking dish (usually about 3 TBSP does fine) and put it in the oven while it's preheating. When the butter is melted, lay each of the marinated breasts as flat as possible, then bake at 400 degrees for about 25 - 30 minutes, or until the chicken is no longer pink inside and heated through.

The same folks have a Lemon Pepper flavor. But we like the Italian.
Bake it in a 375 degree oven.Place a piece of butter margarine or olive oil over the top and sprinkle liberally with salt, pepper ,garlic powder, and Italian seasoning.Bake uncovered about 45 minutes.brush with juices from pan after about 30 minutes.Very simple your Grandma's recipe, but crispy skin and well cooked meat.
Get some sazon goya (hispanic foods aisle) and garlic salt. I usually cook it on my George Foreman grill, but in a pan works as well (coat the pan with oil if you use this method).

Mix the sazon goya and garlic salt, then lightly dip the chicken pieces in it on both sides, then cook. To make the rice a little better, you can add sazon goya to it as well. i also like to get the mexican restaurant style cheese to go in the rice and a little on the chicken.

You're only supposed to turn the chicken once..or deep fry. This is one of the best recipes...

    ***Fried Chicken***

    1 broiler/fryer chicken, cut into 8 pieces

    2 cups low fat buttermilk

    2 tablespoons kosher salt

    2 tablespoons Hungarian paprika

    2 teaspoons garlic powder

    1 teaspoon cayenne pepper

    Flour, for dredging

    Vegetable shortening, for frying

    Directions

Place chicken pieces into a plastic container and cover with buttermilk. Cover and refrigerate for 12 to 24 hours.

Melt enough shortening (over low heat) to come just 1/8-inch up the side of a 12-inch cast iron skillet or heavy fry pan. Once shortening liquefies raise heat to 325 degrees F. Do not allow oil to go over 325 degrees F.

Drain chicken in a colander. Combine salt, paprika, garlic powder, and cayenne pepper. Liberally season chicken with this mixture. Dredge chicken in flour and shake off excess.

Place chicken skin side down into the pan. Put thighs in the center, and breast and legs around the edge of the pan. The oil should come half way up the pan. Cook chicken until golden brown on each side, approximately 10 to 12 minutes per side. More importantly, the internal temperature should be right around 180 degrees. (Be careful to monitor shortening temperature every few minutes.)

Drain chicken on a rack over a sheet pan. Don't drain by setting chicken directly on paper towels or brown paper bags. If you need to hold the chicken before serving, cover loosely with foil but avoid holding in a warm oven, especially if it?s a gas oven.

    1 T LEMON JUICE

DREDGE CHICKEN, BATTER, DREDGE AGAIN TILL COATED THICK. REST. DEEP FRY BUTTER CRISCO 365 TO 375 UNTIL GOLDEN.

Soak the chicken overnight in buttermilk with a little salt, sugar and a few smashed cloves of garlic. Drain thoroughly, then sprinkle on some seasoning (I use a mix of salt, pepper, paprika, garlic powder, onion powder, and a little cheyenne pepper, but you can make up your own to suit your tastes). After seasoning, coat the chicken with flour and place it into a pan of hot oil. Turn only once.
soak the chicken pieces in buttermilk with hot sauce in it(don't worry it doesn't make it hot) for at least 30 minutes. drain the chicken coat it in flour then fry in hot oil don't turn it until its good and brown the coating will release from the skillet when it done enough, salt it after cooking this helps too, something to do with salt bringing moisture out into the oil.
I do it all the time here is my recipe.

Take the chicken and wash/rinse out with water

Place in microvable dish and pour Soy Sauce over and in it

I put aluminum foil on the tips of the legs and wings (its o.k. to do this). Depending on the size of the chicken I put it on for 30-35 mins

baste every now and then with the soy sauce in the dish.
