Chicken recipe?

My young daughter and I love Roast Chicken but are always left when so much leftover. Any suggestions what do or make with the cooked chicken. Over chicken sandwiches for days afterwards and seems dry anyway.Chicken recipe?
Chicken %26amp; Apple Fajitas





Ingredients





450 g (1lb brambly apples peeled, cored and thickly sliced


Juice of 1 lime


1 tbsps oil


2 medium onions thickly sliced


2 gloves garlic, finely chopped


1 鈥?2 red chillies, deseeded and finely chopped


1 tsp coriander


1tsp cumin


450 g (1 lb) chicken fillets cut into thick strips


Seasoning


1 tbsps fresh coriander, chopped


8 wheat tortillas





Method:





1. cut each apple slice in half and put in a bowl with the lime juice and toss together


2. heat the oil in a large frying pan, add onion and cook over a high heat for 2 mins, add garlic, chillies, spices and chicken then fry stirring for about 5 minutes until chicken is golden. Lift chicken out of the pan and set aside


3. Add apple with lime juice and 5 tbsps of water to the pan and cook with the onions for 3 minutes.


4. Return the chicken to the pan and continue to cook for a further 5 minutes, until apples are tender but still hold their shape


5. Heat the tortillas as directed on the pack. The quickest way is to transfer them to a plate, cover with film and microwave on high for 20 鈥?30 secs


6. Season filling with salt and pepper, then add fresh coriander.


7. To serve, place 2 heaped tbsps of filling in each tortilla, roll up and enjoy!Chicken recipe?
Make sweet and sour chicken
Chicken Tetrazzini
I usually make a homemade chicken pot pie with my leftover roast chicken. Here's the recipe I use and it's delicious.





Filling:


2 small red potatoes, cubed


16 ounces frozen mixed veggies (carrots, corn, peas, green beans)


1 cup frozen chopped onions


1 teaspoon salt-free chicken seasoning (recommended: McCormick's Grill Mates)


2 cups cooked, cubed chicken


1 (10-ounce) can cream of chicken soup (recommended: Campbell's)


1 (10 ounce) can cream of celery soup


Topping:


16 ounces refrigerated biscuit dough, thawed in refrigerator (recommended: Pillsbury Grands)


1 tablespoon butter, melted


3/4 teaspoon black pepper








Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil; set aside.


In a large bowl, thoroughly combine all ingredients for filling. Transfer to a 2 1/2 quart casserole dish. Cover with foil and place on baking sheet. Bake for 1 hour and 10 minutes.





Remove from oven and discard foil. Mixture should be bubbling. Gently stir mixture to evenly distribute heat. Open can of biscuit dough and arrange over top of casserole. Brush tops of biscuits with melted butter and sprinkle with black pepper. Return to oven and continue baking for another 15 to 18 minutes or until biscuits have risen and are golden brown.
Chicken tacos or fajitas
you can always brine the chicken before you roast it, that way it wont be dry. as far as what else to do, go to www.allrecipes.com and look for ideas. I usually throw it in salad, you can make a chinese chicken salad, that's easy and tasty...
chicken salad is always good. just pull the chicken apart in little pieces and add mayonnaise and maybe some chopped onion and selery. easy and deliciouse, not dry.
