I have a chicken left from roasting and would like a recipe for chicken soup pls?

i dont mind if its cream chicken soup or clear...thanksI have a chicken left from roasting and would like a recipe for chicken soup pls?
If you are going completely from scratch (want to make your own broth), heres a recipe I use constantly:





Remove most meat from chicken and set aside.





Put chicken carcass in a pot, and add 2 scraped carrots, one rib of clean celery, one small onion, cut in half. Just barely cover all with cold water, and bring to a boil. Lower heat, cover, and simmer for 2 hours or more.





Strain broth, return clear broth to a clean pot, and boil until liquid reduces by at least 1/2.


At this point, you can cool quickly over a sinkful of ice, or in the refrigerator overnight. Scrape off the layer of fat that exists on the top of the broth after refrigerating.





In a pot, melt about 1/4 cup butter, and add one rib of celery, and 1/2 chopped small onion. Cook over low heat until clear. Add prepared broth, and leftover chopped chicken, and bring to a simmer. Add about 2 cleaned, chopped carrots, and a little parsley, thyme and salt/pepper to taste, and add 1/2 cup rice or small pasta. Simmer about 1/2 hour. Done. I start off, saute' onions, celery, garlic, spices, the I start to add my broth or cream, I like cream soups more then clear, so I would add potatoes, maybe corn and make it in to a chowder.
Shred the chicken and boil them in a small pot of water, add some corn, pepper and salt and then drizzle beaten eggs slowly in the boiling soup and you got chicken corn soup!

i add some extra broth or water and bouillon. i always add sauted celery and onions.


usually a small amout of potatoes Or a lot of barley (cuz i love barley) sometimes i add a little of both. or you could add some cooked rice. and usually carrots


whatever other veggies you have: and that you like

I like to use canned chicken broth, and put a whole bay leaf, poultry seasoning, pepper, and a bit of salt. rough chop peeled carrots, celery and onions and simmer until veggies are almost cooked. Add noodles and chicken to soup, and simmer until noodles are cooked. Serve with a nice crusty bread and soft butter.

PS-remember to fish out the bay leaf before serving. :-)
Once roasted it's not suitable for soup anymore.
