This one is easy to do, and has only 7 ingredients:
EASY HOMEMADE CHICKEN POT PIE
1 boiled chicken, shredded
1 stick butter, melted
3 - 4 c. chicken broth
24 oz. pkg. mixed vegetables
1 tsp. salt
2/3 c. plain flour or 1/3 c. corn starch
canned Hungry Jack biscuits
1. Melt butter, add flour and salt, mix.
2. Pour in broth. Cook and stir until thick and bubbly.
3. Add chicken and mixed vegetables. Pour into glass casserole dish.
4. Add Hungry Jack biscuits on top (I like using the ';flaky type) and bake in oven at 400 degrees until biscuits are done.

HOMEMADE CHICKEN POT PIE
1 cup chopped onion
1 cup chopped celery
1 1/2 cups diced potatoes
1 (16 ounce) bag frozen mixed vegetables, thawed
1/2 cup margarine or butter
1/2 cup all-purpose flour
2 cups chicken broth
1 cup half-and-half OR 2 cans cream of chicken, potato or celery soup
1 teaspoon salt
1/4 teaspoon pepper
4 cups chopped cooked chicken
2 (15 ounce) packages refrigerated pie crusts
1. Saute potato in margarine for 5 minutes in a dutch oven. Add onion, celery and thawed frozen vegetables. Saute for another 10 minutes. Add flour gradually to the sauteed mixture, stirring constantly for one minute.
2. Allow refrigerated pie crust to come to room temperature.
3. Meanwhile, combine half and half (or soup) and chicken broth. Gradually stir into the vegetable mixture. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and pepper. Add chopped chicken, stirring well. Add additional salt and pepper to taste.
4. Preheat oven to 400掳.
5. Spray nonstick spray into a 9 X 13 casserole. Place pie crust on the bottom of the pan to cover, cutting to fit. Pour chicken/vegetable mixture over the pie crust, then top with the remaining pie crust. Cut vents into the top crust.
6. Bake for 40 minutes or until crust is golden brown.

If you want to do small ones, you can always use dinner rolls, small bowls, cream of chicken and whatever vegetables you want in the pie.
Just line the bowl with dinner roll dough, fill with cream of chicken/diced chicken/veggies and top with another layer of diner roll, then bake (following the directions for the dough on the container).
Just butter them up, and serve! This recipe makes really easy and quick muffin sized pies, great for dinner parties or impressing parents. :)
Here's a few easy simple ones
Chicken Pot Pie
4 boneless chicken breast
4 cans mixed veggies drained
3 cans chicken gravy
1 store bought pie crust
Boil the chicken until done, shred or cut up. mix in veggies and gravy. Line pie pan with 1 of the pie crusts, pour in chicken mixture. Top with second crust. Bake at 350 for 35 to 45 minutes or until crust is brown.
Chicken Bake
3 boneless chicken breast
4 cans mixed veggies drained
3 cans chicken gravy
1 box chicken stove top stuffing
Boil chicken until done. Either cut or shred in to pieces. Mix in veggies and gravy. Pour into glass bake pan. Make stuffing as directed on the box, spoon over the top and bake 30 minutes

Chicken Pot Pie
(serves 4)
1 can (10 3/4 ounces) Campbell's庐 Condensed Cream of Chicken Soup (regular or 98% Fat Free)* Also Cream of Chicken With Herbs Soup can be used instead if you like.
1 package (about 9 ounces) frozen mixed vegetables, thawed.
1 cup cubed cooked chicken or turkey
1/2 cup milk
1 egg
1 cup all-purpose baking mix, (Bisquick or Pioneer Baking Mix)
Heat the oven to 400掳F.
Stir the soup, vegetables and chicken in a 9-inch pie plate or casserole dish.
Stir the milk, egg and baking mix in a small bowl. Spread the batter over the chicken mixture. Bake for 30 minutes or until the topping is golden brown.
