Anyone have recipes for authentic Indian Chicken Korma or Chicken Masala?

Chicken Masala





Ingredients


1 kg chicken


4 tbsp. curd (plain yoghurt)


1 tsp. turmeric powder


1 cup onion, finely chopped


1 tsp. ginger powder


1 tsp. garlic powder


2 tsps chilli powder


2 tsps coriander powder


1/4 cup oil


Salt to taste








Directions





Cut chicken into pieces and marinate with curd and salt and keep aside for an hour.


Heat oil and fry turmeric.


Add onion and fry till light brown.


Then add ginger and garlic mixed in a tbsp. of water and stir well.


Then add chilli and coriander mixed in 4 tbsps water. Stir well until the oil comes out clear.


Now add the chicken and sufficient water to make good sauce.


Cover and let cook on gentle heat till chicken is done.Anyone have recipes for authentic Indian Chicken Korma or Chicken Masala?

Chicken Marsala Recipe





Ready in: 30-60 minutes





Ingredients:





4 Chicken half-breasts -- pound 1/4'; thick -- skinned %26amp; Deboned


1/4 cup Wondra flour


1/2 teaspoon Salt


pepper to taste


1/2 teaspoon Oregano


4 tablespoons Oil


4 tablespoons Butter/margarine


1 cup Fresh mushroons -- sliced


1/2 cup Marsala wine





Directions:





Combine flour, salt, pepper and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the flour and shake off the excess. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you turn the breasts to the second side to cook, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. When the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes.








This Chicken Marsala serves/makes 4.

chicken skinned and boned breast pieces


2/3 cup olive oil


4 tbl butter


2 large yellow onions


3 garlic cloves


4 tsp ginger root


2 tsp ground cardamom.


10 whole cloves


5 bay leaves


1 tsp salt


1 1/2 tsp coriander


1/2 tsp cayenne pepper


1 tsp Ground turmeric

1 cup plain yogurt


1/2 cup water


1/3 cup sliced almonds


2 oz cashews


1/2 cup coconut milk


2 tbl Chopped cilantro
Chicken Marsala?...is just a good Chicken dish with Marsala wine added (1/4 to 1/2 cup added near the end instead of water)


I keep a bottle of Marsala and another bottle of Sweet Vermouth at my range; the Marsala is red and heavier and better for red meats, red veggies, red sauces; S.V. is better for white stuff (meats --- chicken, fish, veal), sauces, soups.


I HATE cooking without them available.


I make a MEAN ';Chicken Caccitori'; with Marsala---have had 2 marriage proposals from it. LOL
