Need Excellent Recipe for Chicken Strips?

Am going to use either a cast iron skillet to fry in, or will bake them in the oven. I need a recipe for a good batter, and how to cook them. I like more of a thicker-type breading (like you would find on Long John Silvers fish, for example) rather than a bread-crumb type. Thanks.Need Excellent Recipe for Chicken Strips?
I always enjoyed the beer batter recipes for chicken strips or nuggets:





INGREDIENTS


Chicken strips


1 cup all-purpose flour


1 teaspoon baking powder


2 eggs, beaten


1/2 cup cold beer





3 cups oil for frying


1/2 cup all-purpose flour








DIRECTIONS


Rinse chicken, and slice into 1 inch strips. In a medium bowl, stir together 1 cup flour, and baking powder. Mix in the eggs and beer.


Heat oil in a deep heavy skillet to 375 degrees F (190 degrees C).


Place remaining 1/2 cup flour in a small bowl. Coat chicken strips in flour, then dip floured strips into the batter. Fry a few at a time in hot oil, turning once, until coating is golden brown on both sides. Remove, and keep warm until serving.Need Excellent Recipe for Chicken Strips?
Here's Long John Silver's batter recipe. (This is a classic Tempura batter and can be used with any kind of meat, vegetable, or even fruit!





1/2 cup Bisquick mix


1/2 cup flour


1 tsp. salt


1/2 tsp. sugar


1 egg, beaten


2 TBL. corn oil


3/4 cup Club Soda or Beer


1/8 tsp. onion salt








Mix ingredients into a batter

1-1/2 pounds boneless skinless chicken breasts, cut into 1/2-inch strips


Milk


lemon juice


Oil for frying

Soak chicken strips in milk with a little lemon juice added.


Drain. Lightly flour and allow to dry on a cookie sheet without letting the pieces touch.





When dry, dip strips into batter, and deep fry (without letting pieces touch) in an electric skillet or deep-fat fryer (heat oil to 375掳). Fry chicken, a few strips at a time, for 2-3 minutes on each side or until golden brown. Drain on paper towels.





Serves 6.
