Depends if it's whole or pieces. I'm cooking a whole chicken tonight. I'm gonna chop up a load of herbs (basil, oregano, parsley) and mix with a few onces of butter and a couple of cloves of crushed garlic and some grated lemon rind then push it under the skin of the chicken making sure it goes all the way down the sides. Then boil a lemon for a few minutes, cut in half and stick it up it's bum while hot - voila! Roast until ready! I'm doing saute potaoes and an interesting salad. Served with nice rolls to soak up all the herby garlicky juices -Yum!
try chicken ala king - easy to make - ingredients cheap and tastes yummy
Put chicken in a cooking bag with a raspberry or citrus vinaigrette and any other herbs you may want and tie it up and cook according to your brand of cooking bags directions (usually 350 for 1 to 2 hours)

Grilled Tandoori Chicken Recipe courtesy Emeril Lagasse

Difficulty: Easy

Prep Time: 20 minutes

Inactive Prep Time: 4 minutes

Cook Time: 30 minutes

Yield: 4 servings

1 (4 to 4 1/2 pound) chicken, cut into 8 pieces, skin removed

2 tablespoons vegetable oil

1/2 cup chopped white onion

2 tablespoons chopped garlic

2 tablespoons chopped ginger

1 teaspoon finely chopped serrano or jalapeno pepper, stem and seeds removed

1 tablespoon paprika

11/2 teaspoons salt

1 teaspoon ground cumin

1 teaspoon turmeric

1 teaspoon ground coriander

1 teaspoon garam masala

1/2 teaspoon cayenne

1/2 cup plain yogurt

1 tablespoon fresh lemon juice

With a fork, prick holes in the chicken pieces. Using a knife, cut diagonal slices 1-inch apart, and 1/2-inch deep into the larger pieces. Place the chicken in a baking dish.

In a blender, combine the oil, onion, garlic, ginger, pepper, and process on high speed to a paste. Add the paprika, salt, cumin, turmeric, coriander, garam masala, and cayenne, and process until well blended. Add the yogurt and lemon juice, and process to a smooth sauce, scraping down the sides to combine all the ingredients. Pour the marinade over the chicken. Turn to coat evenly, rubbing the marinade into the holes and slits. Cover tightly with plastic wrap, refrigerate for at least 4 hours, and up to 24 hours, turning occasionally.

Preheat a grill.

Remove the chicken from the marinade. Place on the grill and cook for 8 to 10 minutes on the first side. Turn, baste as needed, and cook on the second side for 8 to 10 minutes. Turn and continue cooking, as necessary until the chicken is cooked through, but still tender, about 25 to 30 minutes. (Alternately, bake in a preheated 425 degrees F oven on a baking sheet for 35 minutes.)
Chocolate Chicken!
FRIED CHICKEN (LIKE KFC):

2 eggs, beaten

1 1/2 cups milk

1 cup flour

3/4 cup fine bread crumbs

1 tsp. Knorr chicken bouillon

1/2 tsp. salt

1/2 tsp. garlic powder (not salt)

1/4 tsp. onion powder (not salt)

1/2 tsp. paprika

1/3 tsp. Bell Seasoning

1 tbsp. freshly chopped parsley

2 large cloves garlic, minced

1/2 tsp. soy sauce

2 tsp. black pepper

1 tbsp. Wondra flour

1/2 tsp. Monosodium Glutamate (optional)

additional flour for separate pre-coating

5-6 cups Crisco cooking oil

1 frying chicken, cut in pieces

Safety Warning: A special pressure fryer is the only type of pressure cooker that you can fry in safely. Read your manufacturer's instructions before frying in a pressure cooker. If you don't have your instruction manual, then prepare this chicken in a deep fryer instead.

Pour the oil into the pressure fryer or deep pan suitable for frying, and then heat over medium heat to about 360 degrees.

In a small bowl beat the egg, milk, and soy sauce, then stir in 1/2 tsp. Knorr chicken bouillon (save the other 1/2). Put the garlic cloves through a garlic press and add into the egg mixture. Add half of the parsley and 1 tbsp. Wondra flour. Stir well.

In a separate bowl, combine the 1 cup flour and the bread crumbs, and the remaining ingredients. Mix well with a fork.

Put about 1/2 cup additional flour in a separate small bowl. Use this to dip each chicken piece, prior to dipping in the milk and seasonings.

Roll each piece of chicken around until well covered, first in plain flour, then in milk mixture, then in flour/bread crumbs mixture.

Gently lower the chicken pieces into the hot oil and allow to become a golden color (add the bigger pieces first).
