Brush on some oil both side and sprinkle with some salt and a lot of cracked black pepper and bake at 180C for 25-25 minutes turning a couple of times.
The thighs are the tastiest pieces, but as a rule there isn't a lot of meat, so I suggest a couple, or a whole leg with the drum attached..

Get a small grill and do it on your patio. If you have left over italian salad dressing it makes a great marinade. You can also make a rub with a pinch of salt, pepper, paprika, and brown sugar. I would rule out oven roasting because you'll be wasting a ton of energy. If you filet the breasts you can do them in a frying pan. Get a meat thermometer and cook it to 160F. Probably 7-8 minutes per side over medium heat on a thin filet.
I know what you mean!! Well the cooking temp will be the same, just keep a closer eye on it. Try giving a quick marinade of olive oil and adobo or sprinkle with lemon pepper. Bake at 375 until juices run clear (probably 10-15 minutes).
For spice, I sometimes bake chicken in the oven until almost done, add BBQ sauce but add a few dried red pepper flakes and stir. Baste often.
i season them w/ salt, pepper, etc., as you wish, and into a greased baking pan they go. i do 2-3 lbs. at a time because they're also good cold as leftovers. about an hr, or a little over(dark meat is forgiving that way. you really have to incinerate them to ruin them) in a 375 deg. oven. i like mine well done, btw.

I usually mix some cajun seasoning with some BBQ sauce and paint that right on nice and thick. Really spicy? Add some Cayenne pepper to the BBQ sauce.
