I'd like to try Arabic cooking: can anyone suggest a nice recipe using chicken?

I seem to have cookbooks from every type of cooking but not an Arabic one!I'd like to try Arabic cooking: can anyone suggest a nice recipe using chicken?
Arabic Chicken With Lemon %26amp; Thyme





2 (4 lb) broiler-fryer chickens, in pieces


1/2-3/4 cup salad oil (I use half canola %26amp; half olive)


2/3 cup lemon juice


2 tablespoons thyme


1 teaspoon garlic powder





Mix all ingredients (but chicken) for marinade.


Marinade chicken at least an hour (up to overnight).


Place chicken in baking dish.


Bake 1 hr at 350, then broil 15 min or until golden brown.

Jawaneh (Grilled Chicken Wings with Lemon and Chicken)

Chicken wings are a popular mezze item. They should be quite lemony and garlicky. You eat them with your fingers.


3 Tablespoons extra virgin olive oil


Juice of 1 lemon


Salt and black pepper


2 to 4 garlic cloves, crushed


16 chicken wings


2 Tablespoons chopped flat-leaf parsley


Mix the olive oil, lemon juice, salt, pepper, and garlic, and place the chicken wings in the marinade. Leave for 1 hour, covered with plastic wrap, in the refrigerator.





Remove the wings from the marinade and place them on a piece of foil on a baking tray and cook them under a preheated broiler for 7 minutes, turning them over once. Or barbecue them over glowing embers for the same amount of time. Serve them sprinkled with chopped parsley.





Serves 4.
