Speedy Chicken Enchiladas





From: Campbell's Kitchen


Prep/Cook Time: 15 minutes


Serves: 4





Ingredients:


1 lb. boneless chicken breasts, cubed


1 can (10 3/4 oz.) Campbell's庐 Condensed Cream of Chicken Soup OR 98% Fat Free Cream of Chicken Soup


1 cup Pace庐 Chunky Salsa


8 flour tortillas (6';)


1 can Campbell's庐 Condensed Cheddar Cheese Soup








Directions:


COOK chicken in nonstick skillet until browned and done, stirring often. Add chicken soup and 1/2 cup salsa. Heat through.





SPOON about 1/3 cup chicken mixture down center of each tortilla. Roll up tortilla around filling and place seam-side down in 2-qt. microwave-safe baking dish.





MIX cheese soup and remaining salsa and pour over enchiladas. Cover.

Spanish chicken %26amp; rice:





2 cups prepared plain rice


1/3 cup medium Salsa AND


1/4 cup medium Salsa


1/2 cup garlic cheese croutons - crushed into crumbs


1/2 tsp. garlic powder


1/2 tsp. onion powder


1/4 tsp. black pepper


1 tsp. salt


1/4 tsp. cumin


2 chicken breasts.


1 oz. water





Place rice in baking dish. Stir in salt, pepper, onion %26amp; garlic powder, cumin, 1/3 c. Salsa and water. Lay chicken breasts on top. Spoon 1/4 c. Salsa over the two breasts. Sprinkle crouton crumbs liberally on top! Set in oven at 425 to bake for 25 - 30 minutes covered w/ foil. Check chicken in 20 minutes for doneness....if not almost finished, keep covered. If nearly finished baking, remove foil and continue to bake until fully cooked (5 to 7 minutes longer). Larger breasts and bone-in breasts take longer!

Cook some sliced chicken mixed with white rice and green beans all together

Garlic Chicken Fried Chicken





This is actually uses my breading for Chicken Fried Steak---my husband suggested we try it with chicken breasts, and it was delicious!





INGREDIENTS:


2 teaspoons garlic powder, or to taste


1 teaspoon ground black pepper


1 teaspoon salt


1 teaspoon paprika


1/2 cup seasoned bread crumbs


1 cup all-purpose flour


1/2 cup milk


1 egg


4 skinless, boneless chicken breast halves - pounded thin


1 cup oil for frying, or as needed





DIRECTIONS:


In a shallow dish, mix together the garlic powder, pepper, salt, paprika, bread crumbs and flour. In a separate dish, whisk together the milk and egg.


Heat the oil in an electric skillet set to 350 degrees F (175 degrees C). Dip the chicken into the egg and milk, then dredge in the dry ingredients until evenly coated.


Fry chicken in the hot oil for about 5 minutes per side, or until the chicken is cooked through and juices run clear. Remove from the oil with a slotted spatula, and serve.

4 Chicken Breasts


3/4 Cup Brown Sugar


1 Medium Onion (chopped)


1/2 Cup Salsa


3/4 Cup Ketchup


Cayenne Pepper to taste





Put chicken in a casserole dish and mix all other ingredients together. Pour over chicken. Cover and cook at 400 F for about 45 min to 1 hour.
Fajitas...simmer chicken in water with a small amount of oil and some seasoning salt. Add chili powder after it is simmering down to taste. When done add a cup of water, green, yellow, and red peppers, along with onion...all in slices. Cook until done, and serve with cheddar cheese, sour cream and fajita shells.
Chicken in Bruette





1 whole chicken


3 cups water


12 oz (1 can) beer or ale


1/2 tsp ground black pepper (preferably fresh ground)


2 tsp ground ginger


12 threads of Saffron (ground in 1 Tbs water)


4 Tbs bread crumbs





Cut chicken into pieces and place in a large pot. Add water, beer or ale, pepper and ginger.





Simmer until chicken is tender and falls off the bone.





Strain, saving the broth and remove the skin and bones from the chicken.





Return broth and chicken to the heat and bring to a boil.





Add bread crumbs and saffron and simmer until thickened.





Remove from heat and serve.
A simple one is to put a few breasts in a 13x9 pan, mix up some cream of broccoli soup..or whatever you prefer and pour it over the chicken and bake it that way. It is nice and tender..and easy!

yeah baked chicken. preheat oven to 350 degrees then have as many desired pieces thawed out season them with your favorite seasonings then put some butter on each bake for 10-20 minutes. TIP: cook with rice and after the chicken is done baking pour the juices from it over the rice. IT'S DEE LICIOUS!!!
Try baking the chicken in a glass dish, fill with butter and lemon pepper seasoning. Pasta Alfredo goes really well. Or mashed potatoes, spiced with jalapenos and cheese are good.
3 chicken breasts (boiled and de-boned) save broth


2 cans pillsbury cresent rolls


2 cans campbells cream of mushroom soup


4 cups shredded cheddar cheese


1/2 cup milk





Mix soup, cheese, milk, and 1/2 broth.


If not creamy, add more broth.





Shredd chicken.





Unroll cresent rolls. In each roll add pinch of chicken and 1 tbls. cheese sauce. Roll and place in a 9 X 13 pan that has been sprayed with PAM. Cover with remaining cheese sauce and baked cover in 350* oven until rolls are no longer doughy.

Mustard Chicken.





1 tbl spoon of mustard


1/2 cup of water


1/2 cup good vinegar





cook the chicken with this ingredients in a fryin pan with a little of olive oil.

I have an awesome chicken recipe I cook frequently. It is super tasty and low fat.





Slit chicken breasts and stuff with equal parts feta and cream cheese with a touch of salt pepper and basil





Cook in pan till browning, take chicken out of pan and in same pan pour 1/4 cup of chicken broth and saute some fresh spinach.





Serve the chicken ontop the spinach. Viola

2-3 skinless boneless breast


1 pound fresh mushrooms


1/2 stick margarine


garlic powder.to taste


cream of mushroom soup


1/2 can milk


couple green onions chopped


pint sour cream














spray a non stick pan with cookin spray heat to med high... cut meat in cubes add to pan...cook chicken til browed...[do it in several small batches] add margarine.cook til melted add sliced mushrooms....cook bout 5 min add chopped green onions soup an milk cook bout 20 min add sour cream cook til hot but do not boil.... serve with rice,homemade mashed potatoes or noddles
