Best mexican shredded chicken recipe?

for a variety of uses but i want a good flavored shredded chicken base to make many recipes with.....tyBest mexican shredded chicken recipe?
Spicy Shredded Chicken Filling





2 medium to large whole or 4 split chicken breasts


2 tablespoons olive oil


4 cloves garlic, minced


4 jalape帽o chiles, stemmed, seeded and minced


1 onion, chopped 6 small to medium tomatoes, chopped


2 teaspoons oregano


1/2 teaspoon salt, or to taste


Approximately 1 cup chicken broth (from cooking chicken breasts)





Simmer chicken in water to cover until just done. Remove the meat, reserving 1 cup broth for later use in recipe and the remainder for another use. When the meat is cool enough to handle, remove it from the bones, cut it into 1-inch pieces, and shred it in a food processor fitted with a plastic blade.





In skillet or Dutch oven, heat oil over medium heat and saut茅 garlic, chiles and onion until soft but not browned.





Add the tomatoes, shredded chicken, oregano, salt and enough chicken broth to barely cover the ingredients. Simmer, stirring frequently, until nearly all the liquid has evaporated.

Chicken Enchiladas or Chicken Tacos/Taquitos
I would simply season the chicken with cumin and a little minced garlic and butter while it's roasting. Cumin is the flavor used to season chicken in a lot of Mexican recipes, as is garlic.
Make what i like to call a mexican sloppy joe (Put between 2 buns) or serve it over some rice with veggies.
Salsa Chicken


INGREDIENTS:





* 4-6 boneless, skinless chicken breasts or thighs


* 2 cups of salsa


* 3 cups chicken broth





PREPARATION:


Bring chicken broth and salsa to a boil in a large pot. Add chicken and simmer for 2 hours. If liquid evaporates to soon, add 1 cup of water. After 2 hours, all of the liquid should be evaporated leaving the chicken and thickened salsa.Use 2 forks to shred the chicken. Serve in tacos or make a burrito with rice and beans.
