I have some chicken quarters and I am looking for a good recipe.
I don't want to have fried chicken and my oven doesn't work. I have a BBQ, but I'd rather not use it right now.

Chicken Paprikash a nice Hungarian dish. Disjoint chicken into thighs and drumsticks. Saute good handful or cup of chopped onions in about 1/4 cu vegetable oil then add about 6 Tablespoons of paprika, stir it in. Then saute your chicken in that, turning it to coat it in the mixture. Then cover the chicken with water, salt and pepper to taste and simmer until chicken is tender, adding water to keep it covered. Take about a cup or little more of sour cream in a bowl and add a cup of the broth from the chicken and whisk it dissolving sour cream. Short cooking time, so prepare ingredients and cook rice beforehand.
Ingredients:
3 oz (75g) cashew nuts
1 red pepper, seeds removed, sliced into thin strips
1 lb skinless chicken breast fillets, cut into thin finger-length strips
3 tbsp groundnut oil
4 garlic cloves, finely chopped
2 tbsp dry sherry (you can drink the rest of the bottle - it would be a crime to waste it)
3 tbsp hoi-sin sauce
2 tsp sesame oil
5-6 spring onions, green part only, cut into 1-inch lengths
Method:
Heat wok/frying pan until hot (medium heat), then dry-fry cashew nuts for 1-2 minutes until brown. Remove nuts and set aside.
Increase heat and add groundnut oil, then add garlic and let it sizzle for a few seconds, then add pepper and chicken and stir fry for 2 minutes.
Add sherry and hoy sin sauce.
Continue to fry until chicken is tender and all the ingredients are evenly glazed.
Stir in the sesame oil, cashews and spring onions.
Serve immediately (with boiled rice).

1 lb. chicken breast, diced in 3/4 inch pieces
3/4 c. cashew nuts
1 bowl diced celery
1 tsp. sesame oil
1/2 c. water chestnuts
2 c. oil
1 tsp. cornstarch mixed with 2 tsp. cold water
SAUCE INGREDIENTS:
1 tsp. light soy sauce
1 tsp. dry sherry wine
1/2 tsp. sugar
1/4 tsp. salt
1 tsp. dark soy sauce
1/4 c. chicken broth
1/8 tsp. pepper
SAUCE: Combine ingredients in a bowl.
Heat wok or skillet and add the oil. Turn heat to low and wait until oil is hot. Add chicken pieces to fry slowly. When the chicken has turned white, remove from wok and set aside.
Remove all the oil, except about 2 teaspoons. Turn heat to high and add the sauce ingredients. When it comes to a boil, add cornstarch paste slowly and stir. Then add the chicken and cashew nuts, celery and water chestnuts. Keep stirring until gravy has thickened. Finally add the sesame oil.

8 oz. chicken, cut up in 1'; cubes
2 tsp. chopped onion
3 slices ginger
2 sm. green pepper
1 fresh chili, optional
4 oz. raw cashew nuts
MARINADE:
4 tsp. egg whites
4 tsp. cornstarch
4 tsp. soy sauce
SEASONING SAUCE:
2 tbsp. %26amp; 2 tsp. soy sauce
4 tsp. cooking sherry (or rice wine)
2 tsp. vinegar
2 tsp. cornstarch
1/2 tsp. salt
1 tsp. sugar
3 tbsp. water
Marinade chicken cubes for 30 minutes. Deseed pepper and chili; cut the pepper into 1 inch pieces and shred the chili. Gently fry the cashews in 4 tablespoons of oil for 5 minutes, until lightly browned; remove and drain. Deep fry chicken for 2 minutes; drain well.
Heat 1 tablespoon of oil and stir fry (high heat) onion and ginger for 15 seconds. Add pepper and chili and fry for 30 more seconds. Then add the chicken and seasoning sauce and stir while the sauce thickens. Add the cashews nuts. Serve immediately with rice

I just served this last month for a dinner. I used a whole trussed up chicken which I served separately but you can use quarters. It can be as quick and simple or as complicated and long-cooking as you want it to be. Make Chicken Spaghetti Sauce. Make your favorite sauce without meat in it and cook the chicken in the sauce. The chicken will contribute some liquid to the sauce so you might have to cook it a little longer than usual. Also, because the chicken will rest on the bottom of the cooking pot be sure to keep the fire a little lower than you usually would. Every once and a while use a long-handled spoon to lift the chicken pieces off the bottom of the pot to prevent scorching.
If you want something a little drier, a little less ';saucier';, try cooking your chicken with some onion, garlic, basil, salt, pepper, parsley and some chopped up fresh tomatos - mushrooms if you like them. You can add a dash of white wine if you'd like. Cover and cook until the chicken is done. Watch that it doesn't dry completely and scorch. Serve with buttered pasta or rice.
Just fry the chicken without coating, with lots of garlic, some oregano (if you have it) or parsley and olive oil if you have it and that splash of white wine for a false coq au vin.
There's hardly anything you can't do to chicken....and I've done most of it.
