10pts to anyone who's got the best BBQ chicken recipe!?

We want to grill out some barbeque chicken breasts (please dont give me recipes for bone-in chicken Anything!) tonight, along with some other southern type dishes.........anyone got a GOOD southernstyle bbq sauce (homemade preferably), to use? I would like basting, marinated (if needed?) instructions also............. thanks!10pts to anyone who's got the best BBQ chicken recipe!?
Marinated Chicken Breasts


Marinating meat helps it stay moist while cooking. This flavorful chicken is both quick and tasty.





4 boneless skinless chicken breasts


1/4 cup spicy mustard


2 tablespoon lemon juice


2 teaspoons Worcestershire sauce


1/2 teaspoon tarragon


1/4 teaspoon black pepper


1. Combine all of the ingredients except the chicken and mix well.





2. Roll the chicken in the marinade and thoroughly coat all sides. Refrigerate in a re-sealable bag or covered glass dish for fifteen minutes.





3. Grill over low to medium heat for fifteen minutes. Turn it once during cooking.





Chicken is one thing that can taste awful if it's not done well. However, you can successfully grill moist and tasty chicken dishes by following these simple recipes.








Basic Tomato BBQ Sauce


1 regular can of tomato sauce


1 can of tomato paste


2 tablespoons vinegar


2 tablespoons olive oil


2 tablespoons brown sugar


3 cloves garlic, crushed


4 tablespoons onion, minced


1 tablespoon Worcestershire sauce


1 teaspoon dry mustard


1 teaspoon cayenne


fresh ground pepper to taste


Cook the garlic and onion until it's soft, and then add all the rest of the ingredients. Simmer on low for 20-30 minutes. Keep stirring it often so it doesn't burn, then refrigerate for a few days before you use it. This allows the flavors to blend and mellow.





Basic Vinegar BBQ Sauce


1 1/2 cups apple cider vinegar


1/2 cup hot water


2 tablespoons brown sugar


1 tablespoon paprika


1 teaspoon cayenne


1 teaspoon salt


1 teaspoon black pepper


Stir the brown sugar into the hot water. Continue stirring until the sugar is completely dissolved. Add the remaining ingredients and heat on low for a few minutes. This perfect to coat pulled pork, but don't add so much that it gets soupy.





Basic Mustard BBQ Sauce


1 cup prepared yellow mustard


1/3 cup brown sugar


1/2 cup balsamic vinegar


2 tablespoons butter


1 tablespoon Worcestershire sauce


1 tablespoon lemon juice


1 teaspoon cayenne


Mix all the ingredients in a saucepan and simmer on low for at least thirty minutes. This is great for southern pork style barbecue.





Once you've tried each of these BBQ sauce recipes, you can choose which is closest to what you want and begin modifying. Add or subtract ingredients, or change the amounts of different spices.

Mix together the following in a small bowl


1/2 tablespoon each


Garlic powder


Onion powder


Dry mustard


Pepper


Salt


and a pinch of cayenne and chili powder





Rub this on the Chicken breast and place in the fridge for at least 1 hr. While your waiting take your average every day bottle of BBQ sauce and place in a sauce pan with the leftover dry rub. Add 1 can or bottle of you favorite beer. bring mixture to a simmer and simmer for 15 min. stirring occasionally. Grill the chicken then baste with the sauce and enjoy.
this is a good souther style but most like it on beef.


1 can (8 ounces) tomato sauce


1/3 cup molasses


1/4 cup vinegar


1 clove garlic, minced


1 teaspoon chili powder

The reason most home grillers burn Bar-B-Qued chicken is the sauce. Do not use tomato sauce! Make your sauce from equal parts vinegar and lemon juice. Add ample parts of Tabasco and Worchestire sauce. Add black pepper to taste. Rub breasts(the chicken's) with salt. Salt keeps grilled chicken moist for some reason. Cook indirect method on a charcoal grill. Baste early and often. Yum!
I have a couple...


Pretty Basic, add more tabasco for more spice


16 oz. Kraft hickory smoked BBQ sauce (with onion bits)


3 dashes Tabasco


1/2 sm. bottle ketchup


Juice of 2 lemons


3 tsp. A-1 sauce


3 tsp. Worcestershire sauce


Splash Old Hickory liquid smoke


Salt and pepper


Mix all ingredients. Enjoy!





This one is more Spicy


3/4 cup fresh lemon juice


1/2 cup cider vinegar


1/3 cup ketchup


1/4 cup vegetable oil


1/3 cup water


1 1/2 tablespoons light brown sugar


2 teaspoons salt


1 1/2 teaspoons powdered mustard


1/2 teaspoon cayenne pepper, or more, to taste


2 tablespoons finely chopped onion


1 clove garlic, mashed

Chicken Breast with Hotter-than-Heck Barbecue Sauce





1/4 cup chipotle peppers in adobo sauce


nonstick spray coating


1/3 cup finely chopped onion


3 cloves garlic minced


1 cup catsup


3 tablespoons white wine vinegar


3 tablespoons molasses


or sorghum


1 tablespoon worcestershire sauce


6 medium skinless boneless chicken breast halves 1 1/2 pounds total





For the sauce, remove any stems from chipotle peppers. Place peppers and adobo sauce in a blender container. Cover and blend till smooth. Set aside. SPRAY a medium saucepan with nonstick coating. Cook onion and garlic in saucepan till tender. Stir in chipotle peppers, catsup, vinegar, molasses or sorghum, and Worcestershire sauce. Bring to boiling. Reduce heat. Simmer, uncovered, about 10 minutes or till mixture is slightly thickened.





Meanwhile, rinse chicken and pat dry with paper towels. Grill chicken on the rack of an uncovered grill directly over medium coals 12 to 15 minutes or till chicken is tender and no longer pink, turning once halfway through grilling time and brushing on sauce the last 5 minutes. Bring remaining sauce to boil; pass with chicken. Sauce may be refrigerated up to a week. Makes 6 servings.





Indirect Grilling: In a covered grill arrange preheated coals around a drip pan. Test for medium heat above the pan. Place chicken on grill rack over drip pan but not over the coals. Cover and grill for 15 to 18 minutes or till chicken is tender and no longer pink, brushing on sauce the last 5 minutes. TIP: As recommended in the recipe above, brush on sweet sauces during the last few minutes of grilling. This allows the flavor of the sauce to penetrate into the food without burning.





Notes: Chipotle peppers are dried, smoked jalapeno peppers with a medium to hot rating and a smoky chocolate flavor. Used extensively in Mexican and Southwest cooking, chipotles are also available canned in adobo sauce, a dark, spicy chili paste
boil the chicken briefly ..marinate in teriaki, 3 Alarm BBQ sauce, and some Italian salad dressing for 3+ hours....then grill it on top of charcoal %26amp; hickory chips...good luck.
the key, regardless of the sauce used is that the BBQ sauce has lots of sugars in them which tends to char the outerpart of the thing being BBQ'ed. For chicken, I recommend you take the chicken breasts and put them in a pot of rapidly boiling water for 5 minutes, remove them from the water and then put them on the hot gril (no sauce). Cook on both sides for 8-10 minutes per side, then when you flip to the original side, coat witht he BBQ sauce, cook additional 3-5 minutes, flip, coat that side with sauce, another 2 minutes, flip last time to carmelize the sauce and get your plate, plate the chicken and enjoy. Par-boiling the chicken ahead of time makes it moister too. Chicken breast on the grill can dry out.
I really wouldn't suggest trying to make your own bbq sauce if you are having company. They really need to cook for a couple of hours to get that consistency that most people really like, plus there are so many things that most bbq sauce makers add, they don't share, your recipe will never be the same without trial and error. Believe me, I have tried. The best sauce I ever made took almost 4 hours and had so many ingredients I never used again.





I suggest that you buy your favorite sauce and add fresh garlic. Take 3 - 4 cloves and mash it on a cutting board with salt. It will become a paste. You can do the same with onion. You may want to add a tbsp. of honey, molasses or brown sugar if you like it sweet. I really do. I like to add a dash of hot sauce and maybe a 1/2 tsp. of mustard. Then I cook it down until it's really thick, almost to the thickness of a pudding. This works really well for chicken breast. For the chicken itself I simply coat it in olive oil, salt and pepper. Throw it on a really hot grill for two minutes per side. This will seal in the juices making moist chicken. Then bring it to the top level of your grill and begin to baste with the bbq sauce on both sides. I generally flip and baste 3 times. You will only need to cook the chicken about 7 more minutes.





For side dishes make either a potato or macaroni salad. They both have the same ';dressing.';





2 eggs hardboiled


1 c. of mayo + a little right before serving


1 tsp. of mustard


1/2 medium diced onion (about 1/4 cup)


1/2 small green pepper (about 1/4 cup)


2 stalks of celery (about 1/4 cup)


1 tbsp. sweet pickle relish


salt and pepper to taste





For macaroni salad boil a whole box of elbow macaroni and two cans of drained tuna fish. Make sure you salt the water for the pasta. For the potato salad cook about 5 large potatoes with the skins on. They will take almost 40 minutes to cook. Peel and dice them in bite size pieces.





I like to mix the ';dressing'; with the pasta or potatoes when they are still warm. Then whatever you choose really absorbs the flavor.





Another is baked beans. Either buy pre cooked bacon, or make about 6 slices of bacon. Add 2 cans of baked beans, I prefer B %26amp; M, but whatever if your favorite is what you should use. To this add 1/4 c. finely diced onion, 1/4 c. brown sugar, 1 tbsp. of mustard. Mix this all with the beans put it in a dispoable pan cover with the bacon slices and put in on the upper level of the grill until bubbly. Probably about 15 minutes.





You could also grill some corn. I prefer mine husk off because I like the taste of the grill on it, but if you can leave the husk on. It only takes about 5 minutes.





Oh, and a veggie. Most southern veggies are cooked inside with some type of smoked meat and take quite a while. I would suggest just a tossed salad.

hen you are making bbq chicken, the basic ingredients for it are as follows, just a pan, some chicken and some bbq sauce. But the secret to doing it right, is to do it via a series of steps, which are outlined here, and are done in parts for your benefit as well. Just do the steps here, with the ingredients, and you have a very tasty dish for you and your families enjoyment.





The ingredients themselves are easy to get, which is very good for those who don't have a lot of money: they are also not very fancy, which is very good budget wise.





The simpleness of this dish is very good too. It is very tasty and nice, and I have had it as well too. It also happens to be a very good one for families and for kids as well too. If you are hungry after the first serving, you can make some more of this dish with the proper ingredients, and all the better, which is good if you also happen to have a lot of hungry people.





Process:





1. Get four pieces of chicken out, a pan, and 4 cups of bbq sauce.





2. On medium heat, with pan on cooking area, put your bbq sauce in there, let it get warm a little.





3. Place the four pieces of chicken in the pan with the sauce.





4. Let cook for 25 to 30 minutes, or until chicken is all the way white through and through. Or doesnt have any pink areas in it as well.





5. Get off pan, and put on plate.





6. Enjoy.





7. If you want some more, just do the recipe again with the same ingredients, and as per how many chicken that your guests can eat.
I always boil my chicken just a few minutes before i put it on the grill, This ensures the meat is cooked fast and doesn't burn and also takes a good amount of the fat out that causes flare ups. Use any BBQ sauce ...I usually add some Brown sugar to mine as i like it sweet. Good luck!
BBQ Chicken


1 whole cut up chicken


1 (21 5/8 ounce) bottle barbecue sauce (I use Hunt's Hickory)


3/4 cup butter


salt and pepper





1. Clean all the skin off your chicken, and Boil.


2. Reserve 1-1 1/2 cups of broth from chicken.


3. Allow chicken to cool slightly, then remove chicken from bones.


4. Put chicken, BBQ sauce, butter, %26amp; S/P in pot and heat over medium heat.


5. When it starts a small boil add 1/2 cup broth, now this is more or less to taste, but you need at least a 1/2 cup.


6. Let chicken simmer for about 20 minutes then serve.


7. If you want to use this sauce to grill with, cut your butter to 1/4 cup to 1/2 bottle of sauce. and 1/4 cup broth. melt your butter, add it to your sauce, then add broth, as always add to your taste, but put at least a 1/4 cup. Just brush over your chicken on the grill -- ENJOY!
