I have the skinless chicken and the pesto, now what?

4 boneless, skinless chicken breasts


1 recipe pesto: follows


3 cups basil


1/2 cup pine nuts


6 cloves garlic peeled


olive oil


salt


Fresh Mozzarella


1/2 cup flour


Place basil in cuisinart, pulse until chopped. Add pine nuts and garlic and pulse to mix. While mixing add olive oil in steady stream until desired thickness of the pesto is reached. Salt if needed.





On a flat surface butterfly the breasts (cut them in half lengthwise, leaving them connected) spread on a piece of waxed paper and pound to 1/4 inch. Season with salt %26amp; pepper.


Dredge in a small amount of flour then brown both sides of breast quickly. Lay cheese slices on 1/2 of one side of the chicken breast, brush with pesto generously. Fold over breast and use a toothpick to hold if necessary. Brush top with pesto and bake in 400 degree oven for 8-10 minutes or until mozzarella and chicken is done.





Garnish with thin lemon slices and fresh basil leaves and serve.Do you have a recipe for chicken pesto?
Baked Pesto Chicken





Prep Time: 5 Minutes





Cook Time: 25 Minutes





Servings: 4





Ingredients:


4 boneless, skinless chicken breast halves


1/3 cup Refrigerated Pesto with Basil


3 plum tomatoes, sliced


1/2 cup shredded mozzarella cheese





Directions:


1. PREHEAT oven to 400 F. Line baking sheet with heavy-duty foil.


2. PLACE chicken and pesto in medium bowl; toss to coat. Place chicken on prepared baking sheet.


3. BAKE for 20 to 25 minutes or until chicken is no longer pink in center. Remove from oven; top with tomatoes and cheese. Bake for an additional 3 to 5 minutes or until cheese is melted.
Grill the chicken. Cook some pasta. Mix the pesto with the pasta. Top with grilled chicken.
i make a panini YUMMY.. i have grilled chicken pesto, smoked gouda roasted red peppers and omg soo good!
