Marinate your chicken breast in Italian dressing for an hour then bake on 350 for about 50min. then serve over rice it is really easy and good
Easy Chicken and Pasta Parmesan:





25 min 10 min prep


3-4 servings





1 tablespoon butter or margarine


1 lb boneless skinless chicken breasts, cut into 1/ 2-inch pieces


1/4 cup chicken broth or low sodium chicken broth (14-1/ 2 oz can)


1/2 cup spaghetti sauce (14 oz jar)


1/2 teaspoon dried basil


1/2 teaspoon oregano leaves


3 cups rotini pasta (8oz) or penne rigate, uncooked (8oz)


3/4 cup parmesan cheese, grated





1. In 10 inch skillet over medium-high heat, melt butter; add chicken.


2. Cook, stirring occasionally, until no longer pink, about 3 minutes.


3. Add chicken broth, spaghetti sauce and seasonings; heat to boiling.


4. Add uncooked pasta, stirring to coat with liquid.


5. Cover; reduce heat. Simmer 15 minutes, stirring every 2 minutes or until most liquid is absorbed.


6. Remove from heat; stir in Parmesan cheese. 5 servings (1 cup each)
Marinate in your favorite, then toss on the grill........
Put chicken into a baking dish with a good deal of olive oil. Spice with curry or poultry seasoning or salt and pepper. Add whatever veggies you like - carrots, celery, potatoes, yams, cauliflower, broccoli, etc. Give those a little seasoning too. Cook at 350 degrees until the chicken is done - about 90 minutes to two hours.





Chicken ke-bobs. Cut up chicken breast and marinate in oil and spices you like (curry, salt, pepper, thyme, rosemary, etc.) Put chicken on wooden skewers and alternate with mushrooms, peppers, onions. Toss on the grill until chicken is done (or you can cook in the oven).





Chicken soup - Fill a pot half full with water and add Better than Boullion, chicken flavor to taste. Add a couple of bay leaves, salt, pepper and thyme - to taste. Cut up two chicken breasts and add to the pot. Add chopped carrots, celery and green onion. Simmer for two hours and enjoy!





Easy BBQ: put chicken thighs in a baking dish and smother with store-bought BBQ sauce. Cover with aluminum foil and cook at 350 for a couple of hours. Make sure you leave space at the top of the baking dish or you'll wind up with BBQ sauce all over the inside of your stove.





Chicken soup. Make chicken soup, but add green beans and corn and cut up red potatoes. Then, at the end, add corn starch. Mix corn starch and cold water really well and then add to the soup to thicken it.
Pad Thai with Chicken and Shrimp





1 tablespoon soy sauce


1 tablespoon water


1 tablespoon creamy peanut butter


1 teaspoon Asian chili paste, such as sambal oelek


3 tablespoons canola oil


1 teaspoon minced garlic


1 teaspoon minced ginger


1/2 cup julienned mixed vegetables (carrots, yellow squash, zucchini)


4 ounces boneless, skinless chicken breast or thigh, sliced into strips


12 medium to large shrimp, peeled and deveined


1/4 pound medium-wide rice noodles, soaked in warm water until softened and drained


1 tablespoon packed light brown sugar


1 tablespoon cider vinegar


Chopped Romaine lettuce, for garnish


Mung bean sprouts, for garnish


Lime wedges, for garnish


Fresh cilantro leaves, for garnish


Chopped peanuts, for garnish


In a small bowl, whisk together the soy sauce, water, peanut butter, and chili paste until smooth.


Heat a large wok over medium-high heat, and add canola oil. When the oil is hot, add the garlic and ginger and let cook until fragrant, about 1 minute. Add the vegetables, chicken, and shrimp, and stir-fry until chicken and shrimp are browned and cooked through, about 2 minutes. Add noodles and toss to coat.


Add peanut/spice paste, brown sugar and cider vinegar and toss to distribute. Cook until heated through, about 2 minutes.


Spread chopped romaine on a platter. Serve pad Thai on top of lettuce and garnish with mung bean sprouts, lime, cilantro and chopped peanuts.
