Bake the chicken legs, and the last 15 minutes add sauce.

Hidden Valley Crispy Chicken
Mix 1/4-1/2 cup dry bread crumbs with an envelope of HV dressing mix.
Shake chicken with the above in a plastic bag until coated.

Crispy Rosemary Chicken and Fries

This is a one pan meal that's in the oven in 15 minutes. Rosemary, garlic, and oregano create a mouth watering aroma. If using dried herbs in place of fresh, use 1/3 the amount. Potatoes are crispy like french fries, just serve with ketchup. Kids just love this!
Ingredients
4 chicken thighs
3 small red potatoes, quartered
1/4 cup extra-virgin olive oil, or as needed
1-1/2 teaspoons chopped fresh rosemary
3/4 teaspoon chopped fresh oregano
3/4 teaspoon garlic powder
salt and pepper to taste
Directions
Preheat the oven to 375 degrees F (190 degrees C).
Place chicken and potatoes into a large bowl. Pour olive oil over them, and stir to coat. Scatter the chicken and potato pieces in a large baking dish, or cookie sheet with sides. Sprinkle with rosemary, oregano, garlic powder, salt and pepper.
Bake for 1 hour in the preheated oven, uncovered. Baste during the last 15 minutes for extra crispness.

Add a package of dry onion soup mix to a ziploc bag. Toss the chicken legs in and shake.

This is probably the most frequently prepared chicken dish in our house because it is (a) delicious, (b) simple, (c) gives the flavor of fried without the fat, (d) as good cold as it is hot any time of the day. This is easy enough for the kids to prepare themselves without having to rely on salty, expensive ';shake and bake'; mixes.
Chicken legs, skinned and trimmed of fat
Milk (skim or low-fat) for soaking the chicken
1/2 c. plain dry bread crumbs or cereal crumbs 1/3 c. grated Parmesan cheese
1 tbsp. dried parsley flakes, crumbled
1/4 tsp. freshly ground pepper or to taste Vegetable oil spray for the chicken, if desired
1. Place the chicken pieces in a shallow bowl or pan and cover them with the milk. Let the chicken soak for 15 minutes or longer (refrigerate, if necessary, to keep the ingredients cold).
2. In a shallow bowl or pie plate, combine the bread crumbs or cereal crumbs, cheese, parsley flakes and pepper.
3. One by one, dip the soaked chicken pieces in the breading mixture, coating the chicken on all sides. Set the coated chicken pieces on a greased baking sheet, preferably one with a non-stick surface. Lightly spray the chicken pieces with vegetable spray, if desired.
4. Bake the chicken in a preheated 375 degree oven for about 45 minutes.
