I have a great delicious recipe for your chicken pomodoro recipe!
Ingredients
2 cloves garlic, finely minced
4 boneless, skinless chicken breast halves
1/8 teaspoon crushed red pepper flakes (optional)
1 tablespoon olive oil
1 can (14-1/2 ounces) DEL MONTE庐 Stewed Tomatoes - Italian Recipe
2 small zucchini, cut in half lengthwise and sliced crosswise
2 tablespoons thinly sliced fresh basil leaves or 1/2 teaspoon dried basil
1/3 cup whipping cream
Prep Time 8 minutes
Cook Time 23 minutes
1. Rub garlic over chicken. Sprinkle with red pepper flakes. Season with salt and pepper, if desired.
2. Brown chicken in oil in large skillet over medium-high heat. Stir in tomatoes, zucchini and basil.
3. Cook, uncovered, over medium-high heat 15 minutes or until sauce is thickened and chicken is no longer pink, stirring occasionally.
4. Stir in cream; heat through. Do not boil.

1/4 cup vodka
1/2 cup low sodium chicken broth
2 tablespoons fresh lemon juice
1/2 cup tomatoes, chopped and seeded
2 tablespoons heavy cream
1/3 cup scallions, minced

Place chicken breasts between 2 pieces of thick plastic wrap and pound until meat is 1/4'; thick.
Heat oil in skillet.
Season chicken with salt%26amp; pepper, then dust with flour.
Saute chicken in oil till golden then remove to a platter.
Pour off fat from pan.
Remove pan from heat and add vodka, stir, return to heat and cook stirring until vodka is nearly gone to deglaze the pan.
Add broth and lemon juice to pan.
Return chicken to pan, cook each side 1 minute then transfer to a warm platter.
Add tomatoes and cream to pan.
Heat through, then pour over the chicken.
